GF Chili Mac

Ingredients:

    1 lb lean ground beef
    One large onion (chopped)
    3 gloves of garlic (minced)
    2 cups shredded cheddar cheese (omit to make casein free)
    1 tbsp olive oil
    1 box of Dr. Schar Fusilli pasta
    2 cans of Amy's Cream of Tomato Soup (it's labeled GF)
    3-4 tbsp of chili powder (to taste)
    salt and pepper (to taste)

Directions:

    Preheat over to 350 degrees F
    Boil pasta according to package and set aside
    Heat olive oil over medium heat in a large sauce pan
    Add onions and garlic and sauté until onions are clear (approx. 2 min)
    Add ground beef and use a spatula or wooden spoon to break up the meat and mix it with the onions and garlic. Cook until browned. (approx 5 min)
    Add the soups and stir until mixed
    Add the chili powder, salt and pepper
    In a large baking dish, spoon in the pasta
    Add the soup/meat mixture
    Add the shredded cheddar cheese
    Stir together
    Sprinkle some shredded cheddar cheese on top
    Bake at 350 for 20 minutes

That's GREAT! It's my favorite. Which pasta did she use? I usually use Schar. Yum.

Honestly, I'm not sure. All I know is that it was tasty!

4. I actually added bell

I actually added bell peppers, celery and diced tomatoes-just because I like a little color in my food. But Joe said it was delicious and I got rave reviews from all the kids I feed on Wednesday nights! Thanks so much Karen! (I just used brown rice elbow macaroni)
